Why is my wine cooler not holding temperature?
Short answer
On wine storage two degrees is damage rather than drift, and the bottles usually cost more than the cabinet holding them.
Why that is usually the answer
If one zone holds while the other climbs, the sealed system is intact and the fault sits in the climbing zone: its evaporator, its fan or its damper. If the panel reads correctly while the bottles feel warm, the probe is sitting somewhere the cold air reaches and the bottles do not, so we take the reading at bottle level. In Escondido there is a second question: where the column actually lives. A cabinet in a bar or dining room, away from the kitchen's ventilation and working against a valley afternoon, has far less margin than the same unit would have at the coast.
Where it usually turns out to be
Ambient is not a footnote on wine equipment. These cabinets are built to hold a narrow band against a normal room, and a room that climbs steadily through the afternoon takes that band away first. The signature is a cellar that reads correctly all morning and sits several degrees high from three o'clock onward, which owners quite reasonably describe as the unit being fine. It is not fine. A collection does not need a dramatic failure to be damaged, and steady daily heat cycling through a long inland summer does that work quietly over months rather than in a single afternoon.
What we check: temperature at bottle level in each zone rather than off the display; the condenser and its airflow path, which on undercounter cabinets means a grille at floor level in a cabinet run with no cross-ventilation; each zone's evaporator, fan and damper independently, since a healthy zone is proof the sealed system is intact; the door seal and the glass, because condensation on the inside of the pane is a separate fault from a temperature drift; and sensor placement and calibration. If a zone has been drifting for a while, tell us how long. It changes what gets tested first.

Will the unit have to be pulled out of the cabinetry, and what does that put at risk?
Almost never. Built-in and integrated Sub-Zero equipment is serviced in place: the condenser is reached through the grille, and the fans, boards, sensors and ice maker are reachable without moving the cabinet. Most Escondido cooling calls end at a condenser loaded with valley dust behind that grille, so the unit stays put. Sliding a loaded column across tile is how a fan motor turns into a flooring bill.
