Why is my oven not heating properly?
Short answer
Most ovens described to us as broken are still lighting and still heating. They are holding the wrong number, faithfully, because the sensor has drifted and the control has no reason to doubt what it is told.
Why that is usually the answer
What that looks like in the kitchen is uneven browning, or a roast that suddenly wants another half hour, rather than a cold cavity. A cavity with no heat in it at all is usually the simpler and cheaper fault: on gas, an igniter still glowing brightly enough to look healthy but no longer drawing enough current to open the valve; on electric, the bake element or the relay behind it. An oven that died immediately after a self-clean cycle is nearly always the door latch or a thermal cutout.
Where it usually turns out to be
That last one is worth flagging in Escondido specifically. A self-clean cycle drives the cavity to its highest temperature for several hours, and running it in a kitchen that has already been sitting hot since noon leaves the surrounding components nowhere to shed their own heat. The cutout does precisely what it was fitted to do, the oven goes dead, and the owner concludes the range has failed. Run self-clean early in the morning or on a cool evening instead. If it has already happened, the repair is usually the cutout or the latch rather than the control board somebody else wanted to sell you.
What we check: sensor resistance against the model's own table plus a calibrated probe reading taken at rack level, because thirty degrees low is a measurement rather than a complaint; igniter current draw under load rather than whether it lights up; bake and broil element continuity; the door latch, hinges and gasket, since a heavy door that no longer closes square costs temperature before anything electrical fails; and any stored fault code, read before it is cleared.
